This Beet Salad is hard to beat! It has a lot of rhythm to it too! (Just teasing, I had to say that part about rhythm because this blog is mainly about music.) I was sugar deprived (thankfully now) when I was a kid and I used to call beets candy – it was like eating a treat. I still enjoy eating them today. Last Saturday I found some at the farmers market. They are available all year but their peak growing season is between June and October. The sweetness of this vegetable is so fantastic when coupled with crunchy chopped pecans. This salad is packed with nutrients and it’s so easy to make.
