This is sooooo good! Is your mouth watering like mine is from looking at the picture? I tried it for the first time last summer and I couldn’t get enough of it. I ate the whole thing and wanted more. I was anxiously waiting for the first watermelon to appear at the Farmers Market this season and I finally saw one in Arizona last week. (I have some starting to grow in my garden too that I don’t think will ever be ready.) You can add whatever you like on top, but I think my favorite is the saltiness from the olives combined with the sweetness of the watermelon. It’s a delightful treat. You have to try this, I added my own dressing. I have no idea who came up with this idea first, I love how simple it is and isn’t it creative?
